Okay, I’ll admit it, I think CSA week 10 is the bane of my existence. Cabbage (again), Beets (again), red potatoes (again)… you get the idea. I mean, we’re a little limited recently by time and making sure everything is vegetarian but geez, I think we have done everything we can with those ingredients. Thanks to a little crowdsourcing action though, I think we have our plan.

Now the full contents of the box included the three items above as well as cherry tomatoes, sweet corn on the cob, hot peppers, black raspberries, carrots, and kale.

The cabbage… ok, I still don’t have a plan, mostly because I now have 2 1/2 cabbages in the fridge. I know my mom is getting the gift of a cabbage next week. I am debating vegetarian stuffed cabbage rolls but I will need to see if time allows for those. The other possibility is making some of it into kimchi.

The beets… are going to be pickled! It will be our first adventure in pickling, so I guess we will see how it goes.

The corn (and some potatoes) will be used in a corn chowder early next week.

The remaining potatoes will be used for mashed potatoes and for a potato, fennel, leek soup this week.

Some of the carrots and cherry tomatoes will go into a quinoa side dish of some sort (maybe with the half of a zucchini I still have left from last week).

The hot peppers will add a kick to some burritos and maybe some pizza next week.

The kale, as usual, will be sauteed up on the side.

ALL leftover veggies at the end of next week will be thrown into a quiche.

And finally, those black raspberries! I really wanted to make ice cream with them this week but the pre-husband would prefer to just eat them. Instead, the ice cream for this week will be a chocolate chip mocha of some sort (completely unrelated to the CSA).
